I presume that's a shimano cassette fitment? 9 speed HG70 cassettes (& possibly lower spec) can be broken down easily due to the pins that keep the sprockets in place as opposed to the higher spec ones that had integrated sprocket clusters. Of course 7 & 8 speed would also be fine though are generally all steel sprockets.
As for shifter, do you want friction or indexed, you can still buy top mount 6 speed indexed shifters off ebay for not much. though if you're using the same cassette spacers say from a 9 speed cassette any deore/LX STI shifter will work fine.
As for a rear mech, pretty much any mech will do as they are not speed specific so do not have to match the shifter necessarily.
