For sharpening I use a Crock Stik - company went bust years ago, but there are similar things out there.
Basically it's a wooden base with four holes drilled into it and four ceramic sticks, two coarse and two fine.
Hole set one is sets sticks at a 20 degree angle sticking up for thinning. Run the blade vertically down each side whilst drawing it across.
Hole set two sets the sticks at a 25 degree angle to put on a cutting edge.
Almost skill free, but will put a shaving edge on a cow pat.
I know that people like different angles for different uses, but for utility / kitchen / field knives I've yet to find something so simple yet so effective. I even have a mini version where the rods fit into the base for taking with me into the field.
A blunt knife is a crap tool - and makes you way more likely to cut yourself.

My inventory by the way is a mix of Global and Sabatier in the kitchen, Laguiole Rossignol steak knives (rosewood handles), Ken Onion speedsafe folder and field knife, a Leatherman wave and a couple of Victorinox swiss army knives.
I really hanker for something from Bob Dozier though - something with a mammoth ivory handle..... Problem is you then end up with a knife that you'd treat as art rather than a tool.... I don't know if I could justify that.

The machine at 1:30 looks like something out of a human processing facility from terminator.A mate got me one of these from Japan and I seem to have lost it. Been riffling though all the draws looking for it. Very handy for odd-jobs.

Smith&Wesson SWBLOP2G Black Ops 2nd Generation Assisted OpenerThat's my day to day knife. Lovely little thing. I got it with a green handle. It doesn't look that nice anymore since a lot of paint is missing from the blade (I use it from opening packages, as a tool for the BBQ and lots of other stuff. It's a pretty cheap knife with cheap steel (regular stainless, easy to sharp though). It is an assisted opener which means there is a spring inside. if you push the blade open (like with a regular folding knife), the spring makes the blade go out really fast and it's automatically in the locked position. If you would remove the spring it's just a regular folding knife.
I got a lot of knifes but for normal use this one is my favorite. Before I bought this knife I walked around with a ColdSteel Ti-Lite (has hooks that automatically open it if you remove it from your pocket) or with a handmade fixed blade knife. The S&W is smaller, easier to hide in you're pocket.

I have a really nice folder similar to the one above from my hols in Sardinia- went to the knifemakers workshop, saw the ram's horn being shaped- very interesting!
