  • i made a superb risotto last night. alas no pics..
    serves 4

    Arborio rice 400g
    medium onion finely chopped
    salted butter 40g
    glass of white wine
    1 litre of hot chicken stock
    mushrooms 50g chopped
    grated parmesan cheese
    fresh rocket leaves
    freshly ground black pepper

    use a heavy based large saucepan, melt butter with low heat cook onion til transparent, add rice try and coat all the grains by stirring slowly, then add wine wine and ladle of hot chicken stock at regular times so that the rice soaks up the stock properly, add mushrooms keep stirring, add cheese, keep stirring..

    serve with italian meatballs and roasted chestnuts.. add rocket and pepper
    my kids love it.. va buono / thumbs up proper italian nosh
