Sounds exciting!
My gf was on a canal boat over the summer, lovely way to live.
The old guy was right about sailing, take it slow and you have much more time to correct your mistakes. Sailing takes a suprising amount of concentration, but it's easier if you can see the front of the boat (which we couldn't with a 70' barge).
Another piece of advice, if I may be so bold: If it's going wrong, just stop. I don't mean just drop the tiller and panic, stick her in reverse and give it some beans.* If you need to you can just punt yourself around 'til you're on the right heading again.
Oh, and go into moorings forwards.
