Done it twice for the same girlfriend. First was a reconditioned dutch-style bike that she chose the colour of etc and the second was her first fixed build. She loves it. The only advice I would offer you is to involve her in as much of it as you can. Even when it's built and finished keep asking her how it feels etc. Bikes are ongoing projects.
