Perhaps not for you, but what about the people who only ever eat pies?
It's the eggs that make it go hard, more bicarb to make it less dense maybe, but too much air and that also make it go hard. Maybe you just over worked it
@illy - you can dry the leech them of the tannics then they are fine to use.
