  • You are indeed what I would call a lucky bastard! Good work.

  • Well, if it makes you feel any better I spend 65% of my time scrubbing cheesy floors and counters with irritant chemicals!

  • Mama Swine made a plum Tarte Tatin tonight. Was dubious, not mad keen on plums - I swallowed my words, but not before I swallowed another bloody delightful portion.

    That pizza looks first-rate.

  • doubletap, there's a catering supply place down by clapham north, gonna check in there, as well as morleys (which has a sale on) tomorrow.

    thank you for advice...

Whilst looking for peppercorns, for the new pepper mill I bought instead of the saute pan in tk maxx, I saw some sauerkraut and decided I wanted to make some. Simple enough I thought, and it is, as long as you have a sauerkraut fermentation pot like this.. http://www.ebay.co.uk/itm/5-Lt-Fermentation-Sauerkraut-crock-Germany-/260857459575?pt=LH_DefaultDomain_0&hash=item3cbc50f377#ht_500wt_961
which is also available from amazon, but has a shipping price of 19 odd quid. Anyone seen one of these in a london shop??? any specialist food/cookery shops that might have one in stock..

I love cheese an unhealthy amount, not so unhealthy that I would make a hole in a wheel of cheese as a receptacle for a certain appendage............ But not far off if I had your job would certainly die of a coronary in a short space of time.

I have to admit to not having tried your cheese previously where can I buy it?

Well, I eat f'king loads and seem to keep in relatively good shape. I eat loads of veg and fruit, too! It's processed foods, unnatural fats and eating too much sugary stuff when you don't need to that is bad for you, I think.

Want good cheese? Get it here

  • Corney, you want this book. Believe.

I agree. I worked as a cheesemonger in Glasgow for 2 years. Despite basically living on cheese, charcuterie and bread i have never been thinner or healthier since. I think it is the fact that everything is very high quality and despite being full of fat it seems to be 'good' fat so seemed to almost be good for me. Also carting 20kg truckles of cheddar up and down the stairs from the maturing room all day helped!

  • Tuna cakes. Very tasty. Highly recommended.

  • tuna burgers surely?

    turgers...

  • Yep. They are really. In the same Guardian last week they had a recipe for deep fried chicken. They called it "Buttermilk Chicken" instead. Sounds healthier that way.

Next time i think i will try make some sort of "bun" out of sticky rice.

  • Big cooking session tonight - quick spicy pasta for tea, two big trays of biscotti for the coffee shop on saturday, burger patties for tomorrow's dinner and made jerk sauce to marinate the chicken for saturday night. I've never been so organised.

    Gonna be a good weekend.

WOW! You can make Biscotti!! A true hero

  • This week I will be mostly eating acorns

I am going to butterfly a pigs leg and stuff it with roasted acorns, smoked meats, some erbs and cook it till it's jubbly

Also found a wild blueberry and there great crab apple tress near .. B.. I..n..g..o

  • ^^ I did a batch as well ... it was a fairly easy process, but first the dough was not very rollable but to runny. I then might have added a bit too much flour, because mine turned out rock hard. I should have added more almonds as well.
Nevertheless, good with a cup of coffee.

  • Interesting... aren't acorns a little bitter? I heard you can make flour and a kind of "coffee" from them...

  • Anyone work Marleybone way or will be that way tomorrow between 12 and 2pm, Ginger pig are offering free hot pork rolls with this voucher http://twitdoc.com/view.asp?id=23565&sid=I6L&ext=PDF&lcl=hot-pork-sandwich-voucher.pdf&usr=GingerPigLtd&doc=65912508&key=key-11a2a98baihe5n8cnogq If its anything like the sausage rolls and pies they do its gonna be very tasty!
