  • I agree. I worked as a cheesemonger in Glasgow for 2 years. Despite basically living on cheese, charcuterie and bread i have never been thinner or healthier since. I think it is the fact that everything is very high quality and despite being full of fat it seems to be 'good' fat so seemed to almost be good for me. Also carting 20kg truckles of cheddar up and down the stairs from the maturing room all day helped!
