As said, I have no issue with avoidance - it's completely legal. Maybe immoral, but not against the law.

I'd try to pay as little as possible, as long as it's legal. What I wouldn't do is move all the money earned in one country to another in order to evade all taxes. It'd be a nice problem to have though.
Not sure how other athletes do it in Europe, but the majority of the tennis players and F1 drivers seem to be registered in either Monaco or Switzerland.
