remember 700c and 27" need their own size tyres and inner tubes. saw you've already ordered 700c tyres.
The problem will come with brake drop, chances are your frame WILL want 27" wheels, but generally the only ones available are low end dutch bike style 27" wheels.
Another issue with wheels, spacing, what space do you have between the F&R dropouts? I would say your rear will be 120 or 126mm.
THe other type of spacing is chainline, if you get a rear wheel that is intended for a 5-8spd screw on freewheel you WILL be able to put your SS freewheel on, but the chain line will be terrible, the chain will frequently de-rail/ be dangerous. Solutions: buy a rear wheel with the correct dish/spacing in the first place, or buy 5pd+ freewheel wheel, then pay a bike shop to re-space/new axle/re-dish the wheel.
