My first attempt at a fixed gear conversion was with a road frame with a wide wheel base similar to the one you have. It never really worked out properly and I would not try it again. Pedal strike and not very responsive steering being the main issues.
However, if the frameset has an OK weight, say less than 3.5 kgs, it could make a nice relaxed single speed. I second the above advice about mustache bars. Don't spend money on powder coating and decals.
