I made fish cakes the other week, but ball shaped. Cod, spuds, chilli, garlic and lemon-grass, liberally seasoned, flour/egg/breadcrumb; deep-fry. Scoff. Sleep.
Mine were made from the leftovers of a whole roasted salmon.
Salmon (steamed or roasted), 1 tin of tuna in brine, mash of 2 baking potatoes, chopped dill, 1 egg yolk, salt and pepper. Burger shaped, dipped in egg then breadcrumbs, finally fried in olive oil (really hot pan, only needs to brown).
