Twenty odd years of cycling in London, never used more than one lock at a time, always had a quick release front wheel, never used ball bearings, 18 years as a courier freelocking outside buildings, never had a bike or a component stolen.
The risks are over stated: use a good lock and common sense. Some areas are worse than others, the longer you leave it the higher the risk, things like Brooks saddles attract thieves, etc etc.
