My local butcher in Aus put me onto the Victorinox Fibrox knives
The steel is as good as anything, the handles are tough and actually fit your hand (unlike Global and other hipster knives), they are balanced and nice to use..........and only cost about £25 each. I've had one for 3 years and it's still going strong.
