I've always been a fan of global, worked at a catering company for years and there is a lot to be said for just a decent chef's knife as you can use it for most jobs as long as you look after it.
I got a set of Jean Patrique sushi knives about 6 years ago that are still going strong, and if you do a bit of googling they're probably still doing their crazy, just pay for the postage offer, so I got 3 and leather roll to keep them in for about £15. They're not going to be great otherwise why would they sell them like that, but they lasted me this long
