I assume they'd wear in half the time as all the stress is going into half the number of teeth with the same number of revolutions.

As long as you've got an even number of teeth on the chain ring and cog and mount the chain so that only the inner plates are on the teeth i'd imagine that it should be okay. The outer plates of the chain don't touch the teeth at all, and the chain only stretches on the outer plates.
