Chris & Liz are taking an epic of all that is epic in epic bike journeys and riding from new zealand all the way back home to the sunny north (of england), they spent a good while riding up through thailand, but not camb or vietnam. Have a read of their blog posts and check the progress map for ideas of how far you can get with a backpackers amount of kit in tow. They manage to get online pretty regular so I would probably ask their advice on how to get hold of a bike/ kit while your over there.
Never been myself, always fancied it, but I'm not good with heat and/or humidity so I would probably just buy a bike/scooter for the duration then sell it on when I'm done.
