• That stem looks like they were just ready to ship the bike to the exhibition, realised they'd not bought a stem and one of the mechanics went out the back and took one off his old beater MTB and chucked it on.

    Either that or it just happened to be the first choice because the rise and extension were spot on to get the position dialled in with the stem on top of the headset and the tall steerer clamp makes it stiff. You see some very cheap and nasty stems on elite level bikes (check the cheesy 2-bolt Bontrager on VP's sprint bike, for example), so you can't assume that the stem on that bike was an afterthought.
