If you can fit in a bit of touring and don't mind some big climbs, cycling some of the Mae Hong Son loop would be great. I drove it last year and was very envious of the few touring cyclists I saw.
Or if you just want to do a day or two's mountain biking from Chaing Mai, I highly recommend the company we used, who I think were called crank adventures. Wasn't super cheap (guided mountain biking never seems to be), but was well worth it - they knew some amazing routes up in the hills.
