Ultegra is probably OK on road bikes if the frame is good enough.
On the right bike, an old Crane or a complete Golden Arrow 105 group could be perfectly acceptable. The suggestion that only 1st tier groupsets are welcome leads some misguided folk to assume that anything with a 1st tier groupset is porn. It's not about being expensive, it's about being technically and aesthetically correct.

I have to disagree. Setting a saddle up wrong just shows you do not understand how to ride a bike efficiently.
The qr thing is less important, it is a detail, but there is a good reason why the qrs should point up towards the saddle, which is that they are less likely to get tangled in fellow riders spokes, tyres in a race.
The tyre label is an even less important detail, but again there is a reason for it, which is that the pressure rating is normally to be found on the label*, so it makes sense to have it by the valve.
Questions of taste is a different. I happen to think that aluminium bikes look ugly. You may think differently, but you probably wear tennis socks.
