Why can't I get this new tyre on my bike?

the rim doesnt stay in the f'in tyre when u pump it up a bit, the inner tube is bloody huge

What inner tube you've got there? Use one which goes up to 23mm then (700c 18-23). The old one is probably bigger (700c 25-28mm) - you'll pinch it with levers.
