Yeah, I've used one-sided and two-sided SPD's, and I think for polo you'd be better of with two sided. I doubt you'll gain much ground clearance from one sided, and foot support isn't as much of an issue.
I recon you'd do well with some multi-release cleats if you're worried about unclipping in time. Wouldn't ride them fixed on the road, but free-wheel for polo I think they'd work rather well.
