You would be working out the forces of a moving object (bike & rider) hitting a stationary object (car). Bust most significantly the forces created at the weakest points (hinges) by a door which protrudes away from the larger body it is attached to (car) and if this force is great enough to either snap off the hinges or severly bend them or the car body. To calculate things reasonably well, things would get fairly complicated.
