My gf's brooks was also pinched a few months back - was held on with a bit of old chain covered in innertube. Must have been removed with a chain tool so I think thieves are wise to this trick. I always thread a cable lock through mine but I can see that getting snipped fairly easily and the saddle pinched. I think they only sure way is quick release and take the saddle with you but that's a lot of hassle.
