The freezing thing is all about nucleation. Crystals and bubbles need nucleation sites before they can propagate. When making crystals in the lab we used to have to scratch the round-bottomed flask with a glass stirrer to initiate the crystallisation. Anyone who didn't was just crap at cleaning their glassware.

Believe it or not, the two main applications of crystals are drugs and chocolate. Cloud seeding is another one.
