Absolutely!!!
Shimano and magura brakes are designed to run on mineral oil. You can actually get away with using plain old water*, which is a trick many trials riders used to do to get their hyrdraulic rim brakes super sharp by plunging them into a sinkful of water.
*will obviously freeze when gets cold.
Dot fluid also sucks because it goes bad when the bottle has been open a while, plus it is terrible for the environment so not good when you have to dispose of it.
