Softshell troosers sound good. Poached eggs: Don't stir! Get a wide pan and fill with about an inch of water. Put on high heat until the bubbles are just forming. Crack egg in very slowly and gently, you are looking to pour it in with as little momentum as possible so it doesn't spread. Don't stir! Time one minute, then turn off heat. Then time ten minutes. Perfect poached egg.
