Or does the composition of Alu make it such that you can't, hence why they usually fill them.

The "stack of dimes" weld you pictured is a single pass weld. You can make smoother joints in aluminium with a two pass weld but they still need filling or filing to get a truly smooth finish, just as fillet brazed steel joints do.
