Nice to here your back out and riding again! Insurance companies are wankers by definition, its what they are paid to do. With car deals its the same thing, find a real shop quote for like for like (not some internet car supermarket clapped out, smoked in, ex mini cabber - in bike terms) and ignore at least their first 2 offers.
I guess in the end you just went for it and built yourself then produce the receipt to insurance? TBH its probably the quickest way you'll see any money anyway.

Also did you ever catch the driver whodunnit? Being squished by the rear end of a bus or worse, a bendy bus, is probably my greatest riding fear (in london), most of them driving those things are barely qualified to operate a 1.0 nissan micra never mind a 12t volvo.
