1: Cycle Couriers will be in higher demand as the use of motor vehicles in cities are reduced
2: Therefore more people will be reliant on quick reliable delivery sources, i.e. cycle couriers
-The opposite is the reality. The need for our resources is is steadily getting smaller due to the digitalization of the stuff we carry.
3: Current Courier bags seem to be mono straps - is it for ease of use when delivering letters?
-Most 'professional' courier bags have a cross-strap design, not a single strap. More and more people are using backpacks too.
4; There is a large number of accidents between motor vehicles and cyclists

-These things are irrelevant.
6: Cycle Couriers mainly use Fixed gear bikes? is it because they are more reliable due to less equipment to go wrong?
-I used to take it for granted when I rode a track bike for work and nothing went wrong, now I am on gears I miss the simplicity. So yes.
7: Cycle couriers are style conscious, is this fixed gear styling important in the design of a courier bag?
-Not just speaking for myself, cycle couriers are not style conscious. No more so than the average person. I also don't see how you could incorporate "fixed gear styling" into a bag, let alone the fact that cycle couriers ride all sorts of different bikes. A mountain bike themed bag would be cooler than a fixed one, at least couriers were cool when mountain bikes were the tool of choice.
