    I know these things.

    its medium slow cooking anyhow.
    the ras elhanout will be mixed with olive oil and butter and smeared on, then cover the lot in foil and cook for a good while then brown for a bit at the end.
    just like omi taught me.

    (mutton's good too, but since i have the lamb, its getting cooked)
