I'm on my way back from Sydney where I was for 2 years. It's not exactly the same but my experience was in the summer all I wore were standard enduro shorts, rapha short sleeve base layer and an airy set of socks coupled with sidi doms. The biggest annoyance on any ride was just the amount of bloody sweat you built up so like Velocio says, wick it up.
As for winter - prepare for quite chilly nights as you'll be used to the hot weather and now become a pussy to cold climates. I wore baselayer, jersey and jacket in the coldest Sydney weather but it's probably not even close to european cold. Also prepare for it to rain out of the blue like you've never seen before.
