I'd work part time teaching at a university (1-2 days a week) then go back to my house on a Welsh mountain side and make lots of stuff in my well equipped machine, electrical, mechanical, woodwork shop, I'd be that crazy guy that fixes everything, with loads of incomplete project (I already have that part sorted).
I would also drink lots of Cider.
