If I was in your situation I would wait for the cat to go off her food entirely (there will be a time when the instinct to roam/eat will be replaced with a general lethargy and a desire to be left alone), I would then have the cat put to sleep.
You know the cat better than anyone though, so you're in a good place to make whatever decision you choose.
