I think I found one of the issues with my coffee process. After reading about HX machines and pre-flushing I reckon I'm not spending enough time with the pre-flush so the group is too hot when coffee is poured. I will start experimenting with pre-flush times.
In other news the drain is still sputtering out while warming up leaving a nice pool of water under the machine :(
