best plan - if you really want to go down the moustache route - might be to fit the bars to your existing stem, have a ride around, and see how it feels. you will probably be able to tell whether your setup needs adjusting by simply trying it out.
you should probably also check to make sure the brake cables are still the right length - depending on your old setup, the brake-to-lever distance might have changed and they'll be too long/short.

There's only good thing about moustache bar (unless you want to race).
Just put them on, ride it, and decided what stem length you need (edit - pretty much what ftony said).
that moustache handlebar you mentioned have a bit of a love/hate with some people, would you like to borrow my Nitto one to decided? (similar shape), I find a shorter stem help as it's quite a reach to the brakes.

I am thinking about fitting some On One Mungo's to my bowery.
Just fancy something different.
Is there anything i should consider before buying them (apart from 'dont bother')
Such as would i need a shorter/longer stem or the like?
I have a 26.0 stem so clamp size is fine, but its a 130mm long job so stretdches me out.
This is fine in the drops, but am not sure if it will put me in a funny position for the 'tache?
