It's not very practical, for one thing, and for another if you had made this request on Moving Target (which is an actual courier site unlike LFGSS) then you would just have been mocked. There is no way to see if you are up to the job except to do the job. And you will be knackered when you first start so following someone round for a day isn't going to tell you anything useful really. And that is assuming you could even find anyone who would want you following them round which I doubt.
Other things to consider: can you afford to live off the typical low wage that couriers earn? Do you actually know your way round London? Have you ever talked to any couriers?
