KONIJN does have a set of Mini-V brakes. Could work with STI.
With a seat post shim 27.2mm to 31.7/31.8mm, you can use a lot of ahead stems for the stoker.
Why not trying an adjustable type first. to find out the correct length and position (Syntace VRO, Look Ergostem)?
