Had a fitting at Condor for my Condor so I'm pretty sure that's pretty close to 'right' :)

In that case can't you measure your Condor and then match?
Print 3 of those little bike diagrams; one with your Condor specs and then 2 with the closests Langster and Plug sizings then work out what stem/bar/seat combo you need.
Also someone might be able to recomend a good Evan's where they'll change parts and give you a sort of basic bike fit? - the closest I can do is recomend the cycle surgery in Spitlefields mrk.
....oh and take your own saddle next time you try them out. I'd chose the langster, but that's just me.
im not 100 percent but i think a fit will basically just give you your dimensions that will enable you to buy the right sized frame and also what adjustments to make like crank length etc.
