Modern Sturmeys have a cable stop on an arm that goes on the axle. Older ones had a simple fulcrum clip on the chainstay. Have a look at an old 3 speed the next time you're passing a load of locked up bikes.
It's a simple conversion. You'll need a rear brake too. You can get the hubs with coaster or roller brakes built in if you don't want to fit a rim brake.
You could also stay fixed and buy the S3X 3 speed fixed.
