    3) It has a very small amount to do with it, the more gears you have the more crossed your chain can become. This requires a slightly larger derailluer cage to stop chain rub but is not an issue if you have enough trim (campag does)

    4) A 10 speed will have a cassette not a freewheel and yes they are interchangable (but not to 8 speed and below)

    7) Determine the size? Length of cranks and number of teeth is entirely up to you. Your bottom bracket should match the cranks though, 102mm BB for 1995 record onwards, 111mm BB for C-Record...
