I would suggest, if you wanted to diversify a bit, you could try out making something extremely slimline and smart that works as a briefcase and pannier... model it on a flash bike like a Moulton (or even call them up and offer to make a custom bag for Moultons) ...
also think about something rather neat that would work as a barbag/mini-saddlebag ... small enough for just a water proof, some tools, money, phone and perhaps a hipflask ...
call that^ my twopenn'orth.
