  • Pistanator's right.
    Pizza should be white flour base, tomato (lots of it, with oregano), pepperoni, mozzarella, thin as you like.

    Adding nduja salami to the tomato sauce makes for one tasty pizza.

    Or with tomato, parma ham, parmesan and rocket. Another winning combo right there.

    No mushrooms or onions go anywhere near my food, and certainly no artichokes, asparagus or any of that shite.

    ....for the best Pizza. Only serves six types, but ALL excellent. Now in Chiswick and open/closed at the hours most restaurants stick to, unlike Brixton.

    And the award for the worst pizza goes to "La Caricatura" in Mayfair. Special mention to the way-too-oily salads, the nauseatingly warm beer and the can't be arsed staff. It's cripplingly expensive in a marketplace that was originally designed to be simple working mans food.

  • not a fan of most pizzas in this country (not being snobby, just don't like the bases you get in most places - it's a personal thing), but another big vote for franco manca - amazing. or homemade. and minimal toppings.

    gonna try the dough recipe (thank you nuknow!) any suggestions where to get a really good pizza stone?

  • Our first attempt at Pizza in 2009.
    We found it quite hard to get the base just right at first.
    Second batch came out wonderfully.

    Think it had, Chorizo, Smoked Sausage, Crisped Ham. Didn't have enough Mozerella so had to top it off with Cheddar, with Oregano, tasted nice.

    Second time we attempt this, it'll come out perfect I garuntee. I've gotten somewhat a master at making sauces for various types of foods ;)

    American pizza looks like shit although I'm yet to taste any. Please tell me it doesn't have that fake cheese shit on it?

  • tomato sauce / base 'facts' -

    • no onions. if onions, roast slowly, it makes them sweet.
    • good tinned tomatoes are usually better than that shit from holland
    • garlic. cut in tiny pieces, pour 1 tbsp salt over it, mash with fork.
      ...or use a blender to mash garlic with olive oil, then add to sauce.
    • red wine. or a bit of balsamic vinegar.
    • bit of sugar.

    My sauce:

    One large onion finely chopped. Simmer in water for 20 minutes which will bring out all the flavour. Combine with Tomatoe Pureé, Rock Salt, Basil, Chilli Olive Oil, Butter, Finely chopped Garlic and crushed to bring out the juices. Allow to cook slowly for 20-30 minutes on a low/medium heat and stir regularly. Don't boil or it will kill some of the flavour.

    Now you have a big pot of sauce, which can be generic.

    Last week I made beaten breasts of Chicken, slowly cooked in this sauce with additional Musrhrooms and Peppers which were fried first, then added. This was served with Basmati Rice.

    The lady loved it.

  • no, no special recommendation concearning the wine.
    i suppose you won't be buying / opening a bottle just for the sauce, so use what's there..

    how i make dough:

    dissolve a bit of sugar, a teaspoon of salt, and finally 1/3 of a cube of fresh yeast
    in a glass of warm water. ah, and olive oil. stir with a fork until homogeneous.
    put in a mixing bowl, and begin adding flour, using a fork to mix the stuff.
    (i use white, non-whole-wheat flour or dusty middlings, maybe add a bit of corn flour for flavour).
    keep in mind that yeast hates draught!
    keep adding flour and stirring / mashing together, until the dough is no longer sticking to the bowl and you get the impression that you now could continue kneading with your hands. dust your hands and work area (preferably wood) with flour and do so. keep folding and kneading, using the heals of your hands a lot, until the dough feels 'non-sticky'.
    cover dough with flour, cover mixing bowl with tea towel, and put in a warm place.
    wait. i don't know how long exactly, at least half an hour i'd say. longer is better.
    you can also divide up the dough in seperate pieces after kneading, that will help with the rising a bit.

    we can do half hour shifts so could easily get a few people eating.
    (even though the pub is a CAMRA and best for the last 10 yrs in the area apparently, and do pieminister pies, fncking yummy)
