Amsterdam is the worst place to sell new bike, so there are no nice bike shops over there.
Junks dominate the bike business there.
I think you can get any bike for EUR 25.- or so.There are reasons why Dutch people browse U.K. forums and other internet pages.
Certainly not because there's so much nice and good stuff for sale in NL. -

i went to Rih, it's an o.k shop, bought some gloves there.

GER bikes seems to be cool. I've never been there, but I've heard the stories from people I trust.
Owner Ger Hermans used to work at RIH, before he started his own business. -

try tomasito
he recently moved over there and has been buying a few bikes to ship over -

This place has a small selection of racing bikes ripe for conversion: http://www.fietspiraat.nl/
Lots of the general bike shops throughout town have just a very small selection of 2nd hand bikes.
Marktplaats is still the best source. -

There is nice bike shop in Amsterdam Pristine fixed gear
-

Yes, definitely Pristine on Kinkerstraat. Not only do they stock some gorgeous bikes and bits, but they also have the only vegan cafe in Amsterdam upstairs and serve damn good coffee. Lovely people in there!

+1 and very friendly. Nice Gan Well Pro in there had been acquired by one of the guys who worked in there. Stocked some frames, wheels, tyres etc as well as BLB parts. Searched extensively for other track/fixed stores but to no avail. It started to wear a bit thin with Mrs b&d too, but she soldiered on - bless her!
Coffee was great and the food looked great and there was a nice crowd in the upstairs mezzanine level.
Any shops selling nice bits and bobs, bling and bags mainly? Ta
