Another set of options for fixed gear wheels; all the Shimano RS* wheels will take a Surly Fixxer. The RS30 looks like it could potentially be faster than Ellipses for time trials and pursuits, and more than £100 cheaper even with the Fixxer. The soon-to-be-released RS80-C50 is on my shopping list, Shimano's lovely carbon laminate rims in a 50mm depth and likely to be under £750 after being Fixxed.
*and Ultegra-based Pro wheels, so RC50, 4-Rays and road discs
