Why an eno hub for a track bike?

completely depends on what bottom bracket, what crankset, what cog, and what frame.
Apart from that, sounds perfect.

an old road bike conversion is not a track bike.
it depends what length of bb you have.
make sure you get the right O.L.D. hub (i.e. the distance between dropouts is the same as the width of the hub)
does your frame have vertical dropouts?
