You can do it but its going to be a bit of a pain. You have to do a little math to work out the spoke lengths following the general principles set out here:
http://sheldonbrown.com/mismatch/Lacing to a 36h rim is probably best as you'll only have to skip two holes on each flange, but figuring out a strong lacing pattern is probably going to take a little trial and error.

How did this go?
Have 40hole SA hub and cannot for the life of me find 40hole 27" rims in alloy.

I ended broosing a german bike site.
I spotted some rims that I want, but not in 24h.
They did have 'ungebohrt' though.
Did some googling around.
Drilling rims sounds bloody tricky, was the resulting conclusion.small world.

Actually, thinking about it. the tolerances on a 40h rim would be far smaller. As it would be easier to correct imperfections with your spoke key.
Maybe.

The undrilled ones sound like quite a job. If you don't go for that, I've been considering unlacing a wheel that has a silver wolber 40h 27", not perfect but in fairly decent nick.
Let me know if you want first refusal, I was going to sell either as parts or complete on a thread at some point shortly, along with a stripped Jalco 32h front rim and the pair of airlites.
Also, I passed on another Wolber 40h 27" to someone on the forum (that was laced to a 40h front hub), trying to remember who it was now, I feel certain it's sitting in their cupboard still ... I seem to recall it was Tiswas ... could be worth asking him...

Skully: if those rims are in alloy, I would love them. It's a build for my girlfriend and she won't ride steel rims even during the summer. I'll give TisWas a PM now.

You might not need to look for 40h one as I may have a 36h SA 3 speed hubs in great nick going for spare soon.
Wondered if any of you know if you can lace a 40 hole hub into a 36 or 32 rim.
