its not really the speed of the response as much as it is the nature of the response. steeper geo is gonna respond a lot more to much less movement and slacker geo is more forgiving. track geo is intended for holding a line really well but also being able to make really sharp maneuvers to pass other riders on the track where as more "slack" or "roadish" geo is designed for comfort and stability through the pack and much less sharp maneuvering.*"
