Stem clamp, 25.4 vs 26.0

Guys,

I am finally starting to work on my build an getting the bits together. Mercian frame is on order, time for the components. I am torned between the stem size.
I guess the 26.0 is more popular however some nice Nitto bars come only in 25.4 if I am not mistaken. Hence my question, which one would you recommend/ are using?

just buy stem AND bar together - problem solved!
same country/era/maker for some extra style points

It is quite easy to shim out a 25.4 bar to 26. Shimming a 25.4 stem to 26mm bars is a little more difficult. There was mention of an inverse shim on here a while back though.

buy your idea handlebar first, once you did, check the clamp size, and then buy stem in accordance to bar clamp size.
