Guacamole is good and easy to make as are just about any home made dips. Coming up with a good salsa is difficult if you don't know the tastes of the person involved.
Other than that go with pie (fuck off to the crumblists).
Quick and easy is the quiche. Usually an absolute no no for serving to visiting vegetarians, unless you can bring out a really good one. They key really is in the crust, shit pastry makes you look like a twat.
Take 6oz of plain flour. (Doves organic is good for pastry) and blend in 3 oz of cold margarine with a fork. Keep blending until looks like breadcrumbs. Do not skimp on this part. Add a pinch of salt and pepper and stir well. Still using the fork, mix in cold water, a little at a time until you create a ball of dough that is still a little crumbly. Wrap in clingfilm and refridgerate for 20 mins. Once done, roll out quite thin and line a 9-10 inch pie dish that has been lightly greased with sunflower oil. Overcut when trimming around the edge and crimp in so the top of the crust is nice an thick while the rest is good and thin. Get stabby with a fork on the base and prebake at 180C for five minutes.
Filling. Layer some roasted red peppers on the prebaked base. Whisk together three eggs, about 100ml of milk and 100ml of single cream a pinch of salt and pepper. Make sure well aerated. Mix in a handful of grated gruyere cheese and some finely sliced steamed and drained broccoli. Pour into the base and top with thin slices of round goats cheese and small squares of roasted red pepper.
Bake for 25 minutes or until edges of goats cheese have browned nicely. Allow to cool and serve.
